Aggieland Zucchini - South Beach Diet Recipe (Phase 1)
5 or 6 med. zucchini, sliced
1 med. onion, diced
2 or 3 tomatoes, diced
1 tsp. garlic, minced
1 tsp. black pepper
8 oz. Mozzarella cheese, grated
Lightly cook zucchini in large skillet (dry no oil) on medium heat. Add onion and brown lightly. Add tomatoes, garlic, pepper. Simmer 10 minutes on low heat with lid on pan. Pour into large baking dish. Bake at 350 degrees for 10 minutes. Top with cheese and bake 10 minutes more. Serve hot from oven.
Asian Turkey Burgers with Sesame Mayo - South Beach Diet Recipe (Phase 2)
Prep time: 20 minutes
Start to finish: 35 minutes
To make ahead: Prepare through Step 2. Wrap patties individually and refrigerate for up to 8 hours or freeze for up to 3 months. Thaw in the refrigerator before cooking.
Degree of difficulty: Easy
Ingredients
2 slices whole-wheat sandwich bread, crusts removed, torn into pieces
3/4 pound lean ground turkey breast
One 8-ounce can sliced water chestnuts, rinsed and chopped
2 tablespoons hoisin sauce
2 scallions, trimmed and sliced
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1/4 teaspoon salt
11/2 teaspoons toasted sesame oil
1/4 cup Sesame Mayonnaise (see recipe)
To make:
1. Heat grill to medium-high.
2. Place bread in a food processor and pulse into fine crumbs. Transfer to a large bowl. Add ground turkey, water chestnuts, hoisin, scallions, ginger, garlic and salt; mix well. (The mixture will be moist.) Divide the mixture into four equal portions. Form into 1/2-inch-thick patties (see Tip).
3. Oil grill rack (See Grilling Tip). Brush patties with sesame oil. Grill until browned and no longer pink in the center (165°F), about 5 minutes per side.
4. Meanwhile, prepare Sesame Mayonnaise to serve with the burgers.
Tip: When forming burger patties, make them thinner at the center to prevent them from steaming as they cook.
Ingredient Note: Hoisin sauce is a dark brown, thick, spicy-sweet sauce made with soybeans and a complex mix of spices. Look for it in the Chinese section of your supermarket, and in Asian groceries.
Grilling Tip: Oil the grill rack just before cooking. The grill should already be heated and the coals or burners adjusted for the correct temperature. Oil a folded paper towel. Hold it with tongs and pull it toward you over the rack. Do not use cooking spray on a hot grill.
Makes 4 servings.

2 tablespoons reduced-fat mayonnaise
2 tablespoons nonfat or low-fat plain yogurt
1/2 teaspoon reduced-sodium soy sauce
1/2 teaspoon toasted sesame oil To make:
Combine all ingredients in a small bowl; whisk until blended.
Makes about 1/4 cup.
Per tablespoon: 31 calories; 3 g total fat (0 g sat, 1 g mono); 2 mg cholesterol; 2 g carbohydrate; 0 g protein; 0 g fiber; 71 mg sodium.
Balsamic Portobello Mushrooms - South Beach Diet Recipe (Phase 1)
Ingredients:
1 shallot or red onion diced
3 cups of portobello mushrooms ( I like with sliced adult caps)
1 clove garlic
3 tbsp Balsamic vinegar
Spirtz of Olive oil
thyme
basil
chives
Directions:
Sprits non stick fry/saute pan with olive oil. Saute shallots/onions for 2 minutes. Add Garlic and saute for 1 more minute. Add Portobello mushrooms, Balsamic vinegar, thyme ( this is Great with fresh thyme) and basil. Lower heat and cover pan. Cook for 7-12 minutes until mushrooms have turned a brownish color and become flexible. If the pan gets dry you can add a splash of water, broth, or red wine.
Berry Vanilla Parfait - South Beach Diet Recipe (Phase 2)
3 large strawberries
1/4 cup blueberries (frozen,but defrosted works great)
3/4 cup lowfat sugar free vanilla pudding
1/4 cup uncle sam cereal (this almost has a granola thing going on)
1 tbls. fat free cool whip
Layer strawberries cut up on the bottom of a tall glass. (may need some sugar substitute if strawberries arent sweet enough)
Add 1/3 of the vanilla pudding on top
Add uncle sam cereal
Add 1/3 of the vanilla pudding on top of cereal
Add blueberries
Add remaining pudding
Top with cool whip.
Cherry Snapper Ceviche - South Beach Diet Recipe (Phase 1)
4 Cherry snapper (Tilapia) fillets, medium dice
3 fresh limes, juice of
1/2 teaspoon red chili garlic paste
2 ripe Roma tomatoes, medium dice
1/2 yellow Spanish onion, medium dice
2 1/2 tablespoons fresh cilantro finely chopped
kosher salt
black pepper
Saok the diced fish in 3/4 of the lime juice for 3 hours. Drain off the liquid and discard.
Mix the fish with the red chili garlic paste, tomatoes, onion, cilantro, and the remaining lime juice. Seasion with salt and pepper to taste.
Chicken ****** Ideas 45 minute meals - South Beach Diet Recipe (Phase 2)
You can vary this one to suit your needs and your pantry.
Chicken ******* (I buy a huge bag of boneless skinless ******* frozen at costco)
1. Take the ******* out of the freezer and place in a ziplock bag. Add cold water and let sit for 10 minutes or so. (You can skip this and go straight to the oven step, with no problems)
2. Pour out the water and add your favorite vinegar and oil salad dressing.
3. You can either marinade in this for 30 min if you have time, or just bake in a 375 * oven in the dressing for 30 minutes.
4. Here is the clincher. After 30 minutes dump out the dressing and top the chicken however you like. Add feta and tomatoes, or green pepper slices and onion with provolone, a slice of canadian bacon and swiss, bacon bits and cheddar, spagetti sauce pepperoni and mozzerella, basically whatever ya got that you like. Cook for an additional 5 - 10 minutes to melt the cheese.

When I was on it I used this website. Not only on the site but in the message board are really good recipes. It was my saving grace. Recipes from real people!
